This coffee has been produced by farmers from the villages of Mogola, La Florida, El Chiflador, Valle de Palomas and Las Flores in the Marcala Region. All of these farmers produce Arabica varieties with organic production methods. Innovations include the incorporation of beneficial micro-organisms extracted from the surrounding mountains, the use of organic material from domestic animals and sub-coffee products, and fine rock-sand rich in minerals found in the specific crop deficiencies. All the farms are located more than 1480 meters above sea level. The coffee cherry is transferred to the wet coffee processing facility, located in Barrio La Victoria, where the coffee is mechanically pulped and washed, then dried through exposure to the sun in domes with screens to maintain quality and traceability.
